What the turntable says: seating, tea, and the soft no at a Chinese table

In a private dining room — 包间 bāojiān — the seat worth watching is the one facing the door. The evening arranges itself around it, and no one will say so aloud.

The seat that faces the door

The host takes the chair farthest from the entrance, back to the wall, eyes on whoever comes in. The principal guest sits to the host's immediate right. The seat nearest the door belongs to whoever is doing the work of the meal: flagging the server, settling the bill — 买单 mǎidān — before anyone else reaches for it.

Two fingers on the tablecloth

When a host fills your cup, curl your index and middle fingers and tap the table twice. The gesture is 叩指礼 kòuzhǐlǐ, most fluent in Cantonese teahouses and now common well beyond them. Pour for others before yourself, and keep the spout — 壶嘴 húzuǐ — angled away from faces.

The turntable moves clockwise

The 转盘 zhuànpán belongs to whoever is currently reaching. Turn it clockwise in small increments, and never while chopsticks hover over a dish. Serving chopsticks — 公筷 gōngkuài — sit beside most shared plates now; using them is unremarkable, and ignoring them is noticed.

A whole fish arrives head-first toward the guest of honour. Along the southern coast it is not flipped: the top side is eaten, the bone lifted out, the rest reached from beneath.

A no that keeps its shape

Refusals come padded. 随意 suíyì, “as you like”, is the accepted exit from a toast you cannot match, and raising tea instead of baijiu while saying it is understood rather than judged. 下次吧 xiàcì ba, “next time”, closes an invitation without closing the door.

Enthusiasm sounds different. A real yes repeats itself, arrives fast, and carries a time — Thursday, after seven, the place near the station.
